Vi Scrambled Crepe for BRiNNeR!

TSN (tasty, simple, nutritious) is what this house is all about (majority of the time)!

Tonight the kids (& Dai – lol) were stoked to have breakfast food for dinner…a.k.a BRINNER. I decided to make my vi scrambled eggs, which we have coined crepe because of the sweet, fluffy, moist texture.

Vi Scramble Crepe

I put a spoon of coconut oil, 6 eggs, 1/3 cup of coconut milk, 3 scoops vi shake, and a little cinnamon into a frying pan on medium heat. Feel free to mix ingredients in a bowl prior to adding to the frying pan with the coconut oil (this way only dirty’s another dish for me and I do my best to avoid extra work in the kitchen, lol). Either way mix and toss what’s in the pan as you would typical scrambled eggs. We chose to add some bacon, strawberries, blueberries and avocado on the side. 20 minute meal front to back ~ VOILA!

High protein, good fats, and added vitamins/minerals – gotta love it!

Ingredients Needed: Eggs, Coconut Oil, Coconut Milk, Vi-Shape Shake Mix, Cinnamon
